Description

Indulgent yet wholesome sweet bites that capture the essence of traditional pecan pie in a no-bake form, perfect for any occasion.

Ingredients

Scale
  • 1 cup pecans
  • 1 cup pitted dates (soaked)
  • 2 tbsp coconut sugar or monk fruit
  • Pinch sea salt
  • 1 tsp vanilla
  • 1 tsp cinnamon (optional)
  • 1 1/4 cup chocolate chips

Instructions

  1. Add everything to a food processor, besides the chocolate, until a sticky dough forms. This may take a few minutes; be sure to scrape down the sides every now and then.
  2. Roll the sticky mixture into balls and place on a lined cookie sheet.
  3. Flatten them down slightly with your palm.
  4. Place them in the freezer to firm up a little, about 15 mins.
  5. Melt the chocolate until smooth.
  6. Dip each cookie bite into the mixture and return to the cookie sheet.
  7. Place a pecan on top.
  8. Put back in the freezer until hardened!

Notes

For alternatives for those watching sugar intake, consider using stevia, monk fruit, or allulose. Store in an airtight container in the fridge for up to one week or freeze for up to three months.
