Instructions
- Prep the chicken: Season your chicken thighs or breasts with salt and pepper.
- Sear the chicken: In a large skillet over medium-high heat, add a splash of oil, and sear the chicken on both sides until golden brown (about 5 minutes per side). Remove from the skillet and set aside.
- Make the sauce: In the same skillet, add the minced garlic, stirring until aromatic (about 30 seconds). Pour in the chicken broth, scraping any delicious browned bits from the bottom.
- Add the cream: Stir in the heavy cream (or half-and-half), followed by the sliced pepperoncini. Simmer gently, allowing the mixture to thicken slightly.
- Combine: Return the chicken to the skillet. Cover and cook for an additional 10-15 minutes on low heat.
- Serve: Taste and adjust seasoning if necessary, then serve hot, garnished with additional pepperoncini or fresh herbs if desired.
