Description

A classic Southern spread combining sharp cheddar and Monterey Jack cheeses with creamy mayo and zingy pimentos.


Ingredients

  • 2 cups sharp cheddar cheese (shredded)
  • 2 cups Monterey Jack cheese (shredded)
  • ½ cup mayonnaise
  • 4 oz jar diced pimentos (drained)
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ¼ teaspoon cayenne pepper (optional)
  • Salt and black pepper to taste


Instructions

  1. Mix the cheese.
  2. Add the mayo.
  3. Add pimentos.
  4. Season it.
  5. Chill before serving.

Notes

Allow cheeses and mayo to reach room temperature before mixing for a smoother blend. Let the pimento cheese sit in the refrigerator for at least an hour before serving.
