Description

Delightful piñata cupcakes filled with surprises, perfect for celebrations and gatherings.


Ingredients

Scale
  • 1 ½ cups all-purpose flour
  • 1 cup granulated sugar
  • ½ cup unsalted butter, at room temperature
  • 2 large eggs
  • ½ cup milk
  • 1 ½ tsp baking powder
  • ¼ tsp salt
  • 1 tsp vanilla extract
  • 1 cup of your favorite filling (sprinkles, jam, chocolate chips, etc.)


Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Line a muffin tin with cupcake liners.
  3. Cream the butter and sugar together in a large bowl until light and fluffy.
  4. Add eggs, one at a time, mixing well after each addition.
  5. Pour in the milk and vanilla extract; mix until fully incorporated.
  6. Whisk together the flour, baking powder, and salt in a separate bowl.
  7. Add the dry ingredients to the wet mixture, mixing until just combined. Avoid over-mixing.
  8. Scoop the batter into the prepared muffin tin, filling each liner about 2/3 full.
  9. Bake for 18-20 minutes, or until a toothpick inserted in the center comes out clean.
  10. Allow the cupcakes to cool in the pan for 10 minutes before transferring them to a wire rack to cool completely.
  11. Once cooled, use a small knife or cupcake corer to remove a small portion of the center of each cupcake.
  12. Fill each cupcake with your preferred filling and replace the cut-out piece of cake.
  13. Frost the top with your favorite buttercream or icing.
  14. Top with colorful sprinkles or decorations of your choice.

Notes

Use room temperature ingredients for a smoother batter. Experiment with various fillings!
