- 1 1/2 cups vanilla wafers, crushed
- 1/2 cup butter, melted
- 1 package (3.4 oz) pistachio pudding mix
- 2 cups whipped cream
- 1 cup chopped pistachios
- 1 package (8 oz) cream cheese, softened
- 1/2 cup powdered sugar
- 1 teaspoon vanilla extract
Instructions
- Combine crushed vanilla wafers and melted butter in a mixing bowl. Press the mixture into the bottom of a pan to form a crust.
- Mix the softened cream cheese with powdered sugar and vanilla extract in another bowl until smooth.
- Add the pistachio pudding mix and whipped cream to the cream cheese mixture, stirring until well combined.
- Fold in chopped pistachios.
- Pour the filling over the prepared crust and spread it evenly.
- Refrigerate for at least 240 minutes or until set.
- Serve chilled, garnished with additional whipped cream and pistachios if desired.
