Description

A classic Southern dish that combines creamy mayonnaise with tender potatoes, crunchy vegetables, and a tangy twist of mustard, perfect for any gathering.

Ingredients

Scale
  • 2 pounds potatoes
  • 1 cup mayonnaise
  • 2 tablespoons mustard
  • 1/2 cup celery, chopped
  • 1/2 cup onion, chopped
  • 3 hard-boiled eggs, chopped
  • Salt and pepper to taste
  • Paprika for garnish

Instructions

  1. Boil the potatoes in salted water until tender. Drain and let cool.
  2. Peel and chop the cooled potatoes into cubes.
  3. In a large bowl, combine the mayonnaise, mustard, celery, onion, and chopped eggs.
  4. Gently fold the potatoes into the mixture until well combined.
  5. Season with salt and pepper to taste.
  6. Chill in the refrigerator for at least one hour before serving.
  7. Garnish with paprika before serving.

Notes

Allowing the salad to chill lets flavors meld beautifully. It is best enjoyed fresh and not suitable for freezing.
