- 2 pounds potatoes
- 1 cup mayonnaise
- 2 tablespoons mustard
- 1/2 cup celery, chopped
- 1/2 cup onion, chopped
- 3 hard-boiled eggs, chopped
- Salt and pepper to taste

Instructions
- Boil the potatoes in salted water until tender. Drain and let cool.
- Peel and chop the cooled potatoes into cubes.
- In a large bowl, combine the mayonnaise, mustard, celery, onion, and chopped eggs.
- Gently fold the potatoes into the mixture until well combined.
- Season with salt and pepper to taste.
- Chill in the refrigerator for at least one hour before serving.
- Garnish with paprika before serving.
