- 2-3 ripe tomatoes, sliced
- 200g Boursin cheese
- 1 egg, beaten (for egg wash)

Instructions
- Preheat your oven to 400°F (200°C).
- Roll out the puff pastry on a floured surface and transfer to a baking sheet lined with parchment paper.
- Score a border around the edges of the pastry, about 1 inch from the edge, being careful not to cut all the way through.
- Spread the Boursin cheese evenly over the center of the pastry within the border.
- Arrange the sliced tomatoes on top of the cheese, season with salt and pepper.
- Brush the edges of the pastry with the beaten egg for a golden finish.
- Bake for 20-25 minutes or until the pastry is golden and puffed.
- Garnish with fresh basil before serving.
