Description

Delicious and nutritious muffins made with pumpkin and ripe bananas, perfect for a cozy breakfast or healthy snack.


Ingredients

  • 1 cup mashed ripe bananas
  • 1 cup pumpkin puree
  • 1/2 cup honey or maple syrup
  • 1/4 cup vegetable oil or melted coconut oil
  • 2 large eggs
  • 1 1/2 cups whole wheat flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/4 teaspoon salt


Instructions

  1. Preheat oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. Mix together the mashed bananas, pumpkin puree, honey (or maple syrup), oil, and eggs until well combined in a large bowl.
  3. Whisk together the whole wheat flour, baking soda, baking powder, cinnamon, nutmeg, and salt in another bowl.
  4. Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
  5. Fill each muffin cup about 3/4 full with batter.
  6. Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
  7. Allow to cool for a few minutes before transferring to a wire rack to cool completely.

Notes

For a sugar-free version, consider using stevia or monk fruit as sweeteners.
