- 8 oz cream cheese, softened
- 1/2 cup sugar
- 1/4 cup brown sugar
- 1/2 cup vegetable oil
- 2 large eggs
- 1 1/2 cups all-purpose flour

- 1 tsp baking soda
- 1 tsp cinnamon
- 1/2 tsp nutmeg
- 1/4 tsp salt
- 1/2 cup streusel topping (optional)
Instructions
- Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
- Mix together the pumpkin puree, cream cheese, sugar, brown sugar, vegetable oil, and eggs in a large bowl until smooth.
- Combine the flour, baking powder, baking soda, cinnamon, nutmeg, and salt in another bowl.
- Gradually add the dry ingredients to the wet mixture, stirring until just combined.
- Spoon the batter into the muffin tin, filling each cup about 2/3 full.
- Sprinkle the streusel topping over the batter if using.
- Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
