- ½ cup brown sugar
- ⅓ cup vegetable oil
- 2 large eggs
- 1 tsp vanilla extract
Instructions
- Preheat your oven to 350°F (175°C).
- Grease a 12-cup muffin pan or line it with muffin liners.
- Whisk together flour, baking soda, baking powder, salt, cinnamon, nutmeg, and ground cloves in a medium bowl.
- Combine pumpkin puree, sugar, brown sugar, oil, eggs, and vanilla extract in a separate bowl.
- Mix the wet ingredients until well blended.
- Pour the dry ingredients into the wet ingredients and stir gently until just combined.
- Scoop the batter into the prepared muffin tin, filling each cup about two-thirds full.
- Bake in the preheated oven for 18–20 minutes or until a toothpick inserted comes out clean.
- Allow muffins to cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.
Notes
For sugar substitutes, consider using stevia or monk fruit for a healthier option.
