Description

A delightful dessert combining rich chocolate mousse with tangy raspberry sauce and brownie bits.


Ingredients

Scale
  • 1 ½ cups heavy whipping cream
  • ⅓ cup cocoa powder
  • ⅓ cup powdered sugar
  • ¼ tsp espresso powder
  • 1 cup raspberries
  • 2 tbsp white granulated sugar
  • Brownie bits
  • Extra raspberries


Instructions

  1. Place a large mixing bowl in the freezer for 10 minutes to chill.
  2. Pour the heavy cream into the chilled bowl and beat with a hand mixer for about 1 minute until frothy.
  3. Add powdered sugar, cocoa powder, and espresso powder. Mix on medium-high speed until slightly stiff peaks form.
  4. Transfer the mousse to a piping bag fitted with a star tip and set aside.
  5. In a saucepan, add raspberries and sugar over medium heat. Mash the berries slightly while stirring.
  6. Cook for 8 minutes, stirring every couple of minutes, until bubbly and saucy.
  7. Strain the mixture into a bowl to remove seeds, pressing the berries through the strainer.
  8. Assemble the parfaits by piping mousse into the bottom of each cup.
  9. Add a layer of raspberry sauce.
  10. Then, add the brownie bits and pipe the chocolate mousse.
  11. Add a raspberry sauce and finish with brownie bits and raspberry topping.

Notes

For a healthier option, use sugar substitutes for the raspberry sauce.
