Instructions
- Preheat the oven to 350°F (175°C). Line a muffin tin with cupcake liners.
- Whisk together the flour, sugar, baking soda, salt, and cocoa powder in a large bowl.
- Mix together the oil, buttermilk, eggs, red food coloring, vanilla extract, and vinegar in another bowl until well combined.
- Add the wet ingredients to the dry ingredients and mix until just combined.
- Divide the batter evenly among the cupcake liners, filling each about two-thirds full.
- Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
- Let cool completely before frosting.
- Top with cream cheese frosting and enjoy!
