- 4 large bell peppers
- 1 cup ricotta cheese
- 1/2 cup grated Parmesan cheese
- 1 cup fresh herbs (such as basil, parsley, and oregano)
- 1 clove garlic, minced
- Salt and pepper to taste
- Olive oil for drizzling
Instructions
- Preheat the oven to 375°F (190°C).
- Cut the tops off the bell peppers and remove the seeds.
- Mix the ricotta, Parmesan, chopped fresh herbs, minced garlic, salt, and pepper in a bowl until well combined.
- Fill each pepper with the ricotta mixture.
- Place the stuffed peppers in a baking dish and drizzle with olive oil.
- Cover with foil and bake for 30 minutes.
- Remove the foil and bake for an additional 10 minutes until the peppers are tender and the tops are lightly browned.
- Serve warm.
