  • 4 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 tablespoon fresh rosemary, chopped
  • 1 tablespoon fresh thyme, chopped

  • 1 cup vegetable broth


Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Pat the leg of lamb dry with paper towels to ensure a nice crust.
  3. Season generously with salt and pepper on all sides.
  4. Mix minced garlic, olive oil, rosemary, and thyme in a small bowl to create a flavorful paste.
  5. Rub the herb and garlic mixture all over the lamb, massaging it into the meat for maximum flavor.
  6. Place the lamb in a roasting pan, fat side up.
  7. Add vegetable broth to the bottom of the pan to keep the meat moist and enhance flavor.
  8. Roast in the preheated oven for about 90 to 120 minutes, or until a meat thermometer inserted into the thickest part reads 135°F (57°C) for medium-rare.
  9. Baste the lamb halfway through the cooking process for added moisture.
  10. Remove the leg of lamb from the oven and tent it with foil; let it rest for 15-20 minutes before slicing.
  11. Slice against the grain into thick pieces to serve.
