Deliciously baked salmon meatballs paired with a creamy avocado sauce, perfect for a healthy and flavorful meal.


Ingredients

  • 1 lb salmon fillet, skin removed
  • 1/2 cup almond flour
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup chopped fresh parsley
  • 1 egg
  • 1 clove garlic, minced
  • Salt and pepper to taste
  • 1 avocado
  • 2 tablespoons lime juice
  • 1 tablespoon olive oil
  • 1/4 cup Greek yogurt
  • Salt to taste


Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Combine the salmon fillet, almond flour, Parmesan cheese, parsley, egg, garlic, salt, and pepper in a food processor. Pulse until well combined.
  3. Shape the mixture into meatballs and place them on the prepared baking sheet.
  4. Bake for about 15-20 minutes or until cooked through and golden brown.
  5. Blend together avocado, lime juice, olive oil, Greek yogurt, and salt until smooth for the avocado sauce.
  6. Serve the baked salmon meatballs with the avocado sauce.

Store cooked meatballs in an airtight container in the fridge for up to 3 days. Freeze uncooked meatballs for up to 3 months.
