- 14 oz smoked kielbasa sausage (sliced into rounds)
- 1 cup butternut squash (peeled and cubed)
- 2/3 cup bell pepper (any color, chopped)
- 1 small zucchini (sliced into half-moons)
- 1/3 cup red onion (chopped)
- 2 tablespoons California olive oil
- 1/2 teaspoon dried thyme
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon garlic salt
- 1/4 teaspoon ground black pepper
Instructions
- Preheat your oven to 400°F.
- Place the butternut squash cubes in a microwave-safe bowl and microwave for 2 minutes to soften slightly.
- Combine the pre-cooked squash with the bell pepper, zucchini, red onion, and sliced kielbasa in a large mixing bowl.
- Drizzle the olive oil over the top, then sprinkle on the thyme, smoked paprika, garlic salt, and black pepper.
- Toss everything together until each piece is evenly coated with the oil and spices.
- Brush the baking sheet lightly with olive oil, then spread the seasoned sausage and veggies in a single layer.
- Bake for 25 minutes, or until the vegetables are cooked through and starting to brown at the edges.
Notes
For a twist, feel free to swap out the zucchini for asparagus or add mushrooms.
