Description

A vibrant Middle Eastern dish featuring poached eggs in a spiced tomato sauce, perfect for breakfast or any meal.


Ingredients

  • 1 onion, chopped
  • 1 bell pepper, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon paprika
  • 1 teaspoon cumin
  • 1 can (28 ounces) crushed tomatoes

  • 4-6 eggs
  • Fresh parsley, for garnish
  • Crusty bread, for serving


Instructions

  1. Heat olive oil in a skillet over medium heat. Add onion and bell pepper, cooking until softened.
  2. Stir in garlic, paprika, and cumin, cooking for another minute.
  3. Pour in crushed tomatoes and season with salt and pepper. Simmer for about 10 minutes.
  4. Create wells in the sauce and crack an egg into each well. Cover and cook until eggs are set to your liking.
  5. Garnish with parsley and serve with crusty bread.
