Description

Ingredients

  • 8 oz cavatappi pasta
  • 1 lb shrimp, peeled and deveined
  • 2 tbsp blackening seasoning
  • 1 cup corn (frozen or fresh)
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 2 tbsp butter
  • Salt and pepper to taste
  • Chopped parsley for garnish


Instructions

  1. Cook the cavatappi pasta according to package instructions; drain and set aside.
  2. Melt butter over medium heat in a skillet.
  3. Season shrimp with blackening seasoning and add to the skillet. Cook until shrimp are opaque, about 3-4 minutes per side. Remove and set aside.
  4. Stir in corn and cook for a couple of minutes in the same skillet.
  5. Add heavy cream and bring to a simmer. Stir in Parmesan cheese and mix well.
  6. Add the cooked cavatappi and toss to combine with the sauce.
  7. Return the shrimp to the skillet, mix, and cook for an additional 2 minutes.
  8. Season with salt and pepper to taste, and garnish with chopped parsley before serving.
