- 8 oz cavatappi pasta
- 1 lb shrimp, peeled and deveined
- 2 tbsp blackening seasoning
- 1 cup corn (frozen or fresh)
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 2 tbsp butter
- Salt and pepper to taste
- Chopped parsley for garnish
Instructions
- Cook the cavatappi pasta according to package instructions; drain and set aside.
- Melt butter over medium heat in a skillet.
- Season shrimp with blackening seasoning and add to the skillet. Cook until shrimp are opaque, about 3-4 minutes per side. Remove and set aside.
- Stir in corn and cook for a couple of minutes in the same skillet.
- Add heavy cream and bring to a simmer. Stir in Parmesan cheese and mix well.
- Add the cooked cavatappi and toss to combine with the sauce.
- Return the shrimp to the skillet, mix, and cook for an additional 2 minutes.
- Season with salt and pepper to taste, and garnish with chopped parsley before serving.
