- 8 rice paper sheets
- 8 shrimp, cooked and peeled
- 1 cup lettuce, shredded
- 1/2 cup carrots, julienned
- 1/2 cup cucumbers, julienned
- 1/4 cup fresh mint leaves
- 1/4 cup fresh cilantro leaves
- Creamy peanut dipping sauce
Instructions
- Fill a shallow dish with warm water. Soak one rice paper sheet in the water for about 10 seconds until soft.
- Place the softened rice paper on a clean surface.
- Layer in the center of the rice paper: shrimp, lettuce, carrots, cucumbers, mint, and cilantro.
- Fold the sides of the rice paper over the filling and roll it tightly from the bottom up.
- Repeat with the remaining rice paper sheets and filling.
- Serve the spring rolls with creamy peanut dipping sauce on the side.
Notes
Keep ingredients fresh and be careful not to over-soak the rice papers.
