Description

Fresh and vibrant shrimp spring rolls filled with vegetables and herbs, perfect as a light meal or appetizer.


Ingredients

  • 8 rice paper sheets
  • 8 shrimp, cooked and peeled
  • 1 cup lettuce, shredded
  • 1/2 cup carrots, julienned
  • 1/2 cup cucumbers, julienned
  • 1/4 cup fresh mint leaves
  • 1/4 cup fresh cilantro leaves
  • Creamy peanut dipping sauce


Instructions

  1. Fill a shallow dish with warm water. Soak one rice paper sheet in the water for about 10 seconds until soft.
  2. Place the softened rice paper on a clean surface.
  3. Layer in the center of the rice paper: shrimp, lettuce, carrots, cucumbers, mint, and cilantro.
  4. Fold the sides of the rice paper over the filling and roll it tightly from the bottom up.
  5. Repeat with the remaining rice paper sheets and filling.
  6. Serve the spring rolls with creamy peanut dipping sauce on the side.

Notes

Keep ingredients fresh and be careful not to over-soak the rice papers.
