Description
A creamy and crunchy breakfast delight with mashed avocado on crispy sourdough, enhanced by lemon juice and feta.
Ingredients

- 4 thick slices sourdough bread
- 1 tablespoon olive oil
- 2-3 ripe avocados
- 1 lemon
- Salt and pepper to taste
- 40 grams feta (crumbled)
- Everything bagel seasoning (to sprinkle)
- Pea sprouts (for garnish)
Instructions
- Drizzle the olive oil over the sliced bread and place on a tray under the grill to toast until golden brown.
- Turn the slices over so that both sides are toasted and golden.
- Peel the avocados and roughly chop them into chunks.
- Add the avocado into a bowl and gently mash with a fork until chunky.
- Season with salt and pepper and a generous squeeze of fresh lemon juice.
- Mix to combine, taste and adjust seasoning as necessary.
- Pile the avocado mixture over the toasted bread.
- Sprinkle over the crumbled feta followed by the everything bagel seasoning.
- Finish with a little of the pea sprouts for garnish and serve immediately with extra lemon wedges.
Notes
Choose the ripest avocados for the best flavor and creaminess. Don’t skimp on the lemon juice for added brightness.
