- 2 pounds baby potatoes
- 3 tablespoons olive oil
- 4 tablespoons butter
- 2 teaspoons fresh rosemary, chopped
- 2 teaspoons fresh thyme, chopped
- Salt and pepper to taste
Instructions
- Preheat the oven to 450°F (232°C).
- Boil the baby potatoes in salted water until fork-tender, about 20 minutes.
- Drain and let cool slightly.
- Place the potatoes on a baking sheet and gently smash each one with a fork or the bottom of a glass.
- Drizzle olive oil and melted butter over the smashed potatoes.
- Sprinkle with chopped herbs, salt, and pepper.
- Roast in the oven for 20-25 minutes or until crispy and golden brown.
- Serve warm as a side dish.
