Description

Ingredients

  • ½ cup butter (1 stick, softened)
  • 1½ cup white sugar
  • 2 teaspoons vanilla extract
  • 2 eggs
  • 1 cup milk
  • ¾ cups sourdough discard or active starter
  • 4 teaspoons baking powder
  • 3 cups all-purpose flour
  • 1½ cup brown sugar
  • 5 Tablespoons flour
  • 4 teaspoons ground cinnamon
  • 6 Tablespoons butter (melted)
  • ⅔ cup powdered sugar
  • 1 teaspoon vanilla extract
  • ½-1 Tablespoon milk


Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Grease a muffin tin or line it with paper liners.
  3. Whisk together the butter and white sugar until it’s light and fluffy.
  4. Add in the vanilla extract and mix again.
  5. Beat in the eggs, one at a time.
  6. Pour in the milk and sourdough discard; mix until well combined.
  7. In a separate bowl, combine the dry ingredients: baking powder and all-purpose flour.
  8. Gradually add the dry mix to the wet mixture, stirring until just incorporated.
  9. In another bowl, mix the brown sugar, flour, and cinnamon for the cinnamon sugar filling.
  10. Fold in half of the muffin batter into the prepared muffin tin.
  11. Sprinkle half of the cinnamon sugar filling over the batter.
  12. Top with the remaining muffin batter.
  13. Sprinkle the rest of the cinnamon sugar mixture on top.
  14. Bake for 18-22 minutes or until a toothpick inserted comes out clean.
  15. Let cool in the muffin tin for about 5 minutes, then transfer to a wire rack.
  16. In a small bowl, combine powdered sugar, vanilla extract, and milk to create a glaze.
  17. Drizzle the vanilla glaze over the cooled muffins.
