Instructions
- Cook the tortellini according to the package instructions. Drain and set aside.
- Heat olive oil over medium heat in the same pot. Add minced garlic and sauté for about 1 minute until fragrant.
- Add the cherry tomatoes and cook until they begin to soften, about 3-4 minutes.
- Stir in the heavy cream and tomato sauce, bringing the mixture to a simmer.
- Add the fresh spinach and cooked tortellini, stirring to coat everything in the sauce.
- Season with salt and pepper to taste.
- Serve hot, garnished with Parmesan cheese if desired.
