Instructions
- Combine softened cream cheese, powdered sugar, and vanilla extract in a mixing bowl until smooth.
- Fold in the whipped topping until well incorporated.
- Spread the cheesecake mixture into a flat dish and freeze for about 120 minutes.
- Cut into star shapes using a star-shaped cookie cutter once firm.
- Insert lollipop sticks into each star.
- Melt the chocolate chips in a microwave-safe bowl until smooth.
- Dip each cheesecake star into the melted chocolate, allowing excess to drip off.
- Place on a parchment-lined tray.
- Melt the red, white, and blue candy melts separately and drizzle over the pops.
- Freeze again for 30 minutes to set before serving.
