- 2 bone-in strip steaks, 1½-inch thick
- Grapeseed or vegetable oil for brushing
- ¾ tablespoon rock salt
- 1½ teaspoons whole black peppercorns
- ½ teaspoon dried minced garlic
- ½ teaspoon dried minced onion
- ¼ teaspoon fennel seeds
- ⅛ teaspoon red chili pepper flakes
- Big pinch of steak seasoning
- 1 stick (½ cup) salted butter, softened
- 1 tablespoon finely minced fresh rosemary
- 1 tablespoon finely minced fresh thyme
- 2 tablespoons chopped parsley
- 1 garlic clove, pressed or minced
Instructions
- Prepare the steak seasoning: Combine the rock salt, whole black peppercorns, dried minced garlic, dried minced onion, fennel seeds, red chili pepper flakes, and a big pinch of steak seasoning in a bowl. Grind these ingredients together until well mixed.
- Season the steaks: Brush a light coating of grapeseed or vegetable oil over the strip steaks. Rub the prepared steak seasoning onto both sides of each steak.
- Make the herb butter: In a mixing bowl, combine the softened butter, minced rosemary, minced thyme, chopped parsley, and the pressed or minced garlic. Mix until fluffy.
- Grill the steaks: Preheat your grill to medium-high heat. Cook the seasoned steaks for about 4-5 minutes per side for medium-rare doneness.
- Rest and serve: Remove the steaks from the grill and let them rest for 5 minutes. Top with a dollop of herb butter before serving.
Notes
For diabetic diets, avoid added sugars and use suitable sugar substitutes. Room temperature steaks and proper resting are key for juicy meat.
