- 2 tablespoons butter
- 2 tablespoons all-purpose flour
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 1/4 teaspoon nutmeg

Instructions
- Wash and drain the spinach, then chop it coarsely.
- Melt the butter in a large skillet over medium heat.
- Add the flour and whisk for about 1 minute to create a roux.
- Slowly pour in the heavy cream, whisking continuously until the mixture thickens.
- Stir in the Parmesan cheese, nutmeg, salt, and pepper.
- Add the chopped spinach and cook until wilted and heated through.
- Serve warm as a side dish.

For best results, use fresh spinach and continuously whisk when adding cream to avoid lumps.
