- 3 ripe bananas
- 1 cup fresh strawberries, chopped
- 1/3 cup melted butter
- 1 teaspoon vanilla extract
- 1 teaspoon baking soda
- Pinch of salt
- 3/4 cup sugar
- 1 egg, beaten
- 1 1/2 cups all-purpose flour
Instructions
- Preheat the oven to 350°F (175°C). Grease a 4×8 inch loaf pan.
- Mash the ripe bananas with a fork until smooth.
- Stir the melted butter into the mashed bananas.
- Mix in the sugar, beaten egg, and vanilla extract.
- Sprinkle the baking soda and salt over the mixture and mix in.
- Add the flour and mix until just incorporated. Fold in the chopped strawberries.
- Pour the batter into the prepared loaf pan.
- Bake for 60-65 minutes, or until a toothpick inserted into the center comes out clean.
- Let the bread cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.
Notes
For sugar substitutes, consider using Stevia, Monk fruit, or Allulose instead of sugar. Avoid honey or maple syrup as they can affect blood sugar levels.
