Description
A refreshing twist on the classic mimosa, blending sparkling champagne with a creamy strawberry-raspberry puree.
Ingredients

- 24 oz frozen raspberries
- 1½ cup fresh or frozen strawberries
- ¾ cup sugar or 6-7 packets Sweet’N Low
- 1 tbsp honey
- 1 cup half and half cream
- 1 tsp pure vanilla extract
- 2 bottles sparkling champagne (or non-alcoholic sparkling wine, sparkling cider, or ginger ale)
Instructions
- Combine frozen raspberries and diced or frozen strawberries in a medium saucepan over low to medium heat.
- Heat the berries until they become soft and soupy, about 10 minutes.
- Stir in sugar and mix well, then add honey.
- Continue heating the mixture for another 5 minutes.
- Take the saucepan off the heat and let it sit for a few minutes to cool.
- Transfer the berries to a blender and puree until smooth.
- Pour the pureed berries through a fine-mesh strainer into a measuring cup.
- Run a small amount of half-and-half through the strainer to extract any remaining liquid from the seeds.
- Add the remaining cream to the strained liquid and stir well.
- Stir in the vanilla extract.
- Pour the mixture into an ice cube tray and freeze for at least 4 hours.
- Pour chilled sparkling champagne into glasses and add the frozen strawberry cream cubes.
- Serve immediately and enjoy!
Notes
For a lighter drink, omit the cream or use a dairy-free alternative. Chill all ingredients before serving for the best experience.
