Description

A vibrant and flavorful salad combining sun-dried tomatoes, moist chicken, and crunchy veggies, perfect for picnics and busy weeknight dinners.


Ingredients

  • 2 cups cooked chicken, diced
  • 1 cup sun-dried tomatoes, chopped
  • 1 cup celery, diced
  • 1 bell pepper, diced
  • 1/2 cup red onion, diced
  • 1/2 cup mayonnaise
  • 1/4 cup Greek yogurt
  • 2 tablespoons lemon juice

Instructions

  1. Combine in a large bowl the diced chicken, sun-dried tomatoes, celery, bell pepper, and red onion.
  2. Mix together in a separate bowl the mayonnaise, Greek yogurt, lemon juice, basil, salt, and pepper.
  3. Pour the dressing over the chicken mixture and toss until everything is well coated.
  4. Serve as a sandwich, stuffed in pita bread, or with crackers.
