A delightful twist on the classic Tiramisu, featuring fluffy cake layers soaked in espresso and creamy mascarpone frosting.


Ingredients

  • 1 ½ cups cake flour
  • 1 ½ tsp baking powder
  • A pinch of salt
  • ½ cup unsalted butter, softened and cut into 1-inch cubes
  • ½ cup sugar
  • ½ tsp vanilla extract
  • 2 large eggs, at room temperature
  • ½ cup whole milk, at room temperature
  • 3 Tbsp instant espresso powder
  • 3 Tbsp boiling water
  • 4 ½ cups full-fat mascarpone cheese, cold
  • 2 ½ cups powdered sugar, sifted
  • ½ cup espresso or strong coffee, chilled
  • 1 ½ cups heavy whipping cream, cold


Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grease and line with parchment paper two 9-inch round cake pans.
  3. Whisk together the cake flour, baking powder, and salt in a bowl; set aside.
  4. Cream the softened butter and sugar in a large bowl until light and fluffy.
  5. Add the vanilla extract and mix until combined.
  6. Incorporate the eggs, one at a time, beating well after each addition.
  7. Pour in the whole milk and mix until smooth.
  8. Gradually fold in the flour mixture until just combined.
  9. Divide the batter evenly between the prepared cake pans.
  10. Bake for 25-30 minutes or until a toothpick comes out clean.
  11. Allow the cakes to cool in the pans for 10 minutes, then turn them out onto a wire rack to cool completely.
  12. Combine the instant espresso powder with boiling water in a small bowl; let it cool.
  13. In a large bowl, beat the heavy whipping cream until soft peaks form.
  14. In another bowl, beat the mascarpone cheese and powdered sugar until smooth.
  15. Gently fold the whipped cream into the mascarpone mixture until fully combined.
  16. Soak each cooled cake layer with the chilled espresso or strong coffee.
  17. Spread a layer of mascarpone frosting on top of the first cake layer.
  18. Place the second layer on top and frost the top and sides of the cake with the remaining mascarpone frosting.
  19. Chill the assembled cake for at least 2 hours before serving to let the flavors meld.

Notes

Use high-quality espresso for better flavor and ensure your mascarpone is cold for better whipping.
