A delightful twist on the classic Tiramisu, featuring fluffy cake layers soaked in espresso and creamy mascarpone frosting.

- 1 ½ cups cake flour
- 1 ½ tsp baking powder
- A pinch of salt
- ½ cup unsalted butter, softened and cut into 1-inch cubes
- ½ cup sugar
- ½ tsp vanilla extract
- 2 large eggs, at room temperature
- ½ cup whole milk, at room temperature
- 3 Tbsp instant espresso powder
- 3 Tbsp boiling water
- 4 ½ cups full-fat mascarpone cheese, cold
- 2 ½ cups powdered sugar, sifted
- ½ cup espresso or strong coffee, chilled
- 1 ½ cups heavy whipping cream, cold
Instructions
- Preheat your oven to 350°F (175°C).
- Grease and line with parchment paper two 9-inch round cake pans.
- Whisk together the cake flour, baking powder, and salt in a bowl; set aside.
- Cream the softened butter and sugar in a large bowl until light and fluffy.
- Add the vanilla extract and mix until combined.
- Incorporate the eggs, one at a time, beating well after each addition.
- Pour in the whole milk and mix until smooth.
- Gradually fold in the flour mixture until just combined.
- Divide the batter evenly between the prepared cake pans.
- Bake for 25-30 minutes or until a toothpick comes out clean.
- Allow the cakes to cool in the pans for 10 minutes, then turn them out onto a wire rack to cool completely.
- Combine the instant espresso powder with boiling water in a small bowl; let it cool.
- In a large bowl, beat the heavy whipping cream until soft peaks form.
- In another bowl, beat the mascarpone cheese and powdered sugar until smooth.
- Gently fold the whipped cream into the mascarpone mixture until fully combined.
- Soak each cooled cake layer with the chilled espresso or strong coffee.
- Spread a layer of mascarpone frosting on top of the first cake layer.
- Place the second layer on top and frost the top and sides of the cake with the remaining mascarpone frosting.
- Chill the assembled cake for at least 2 hours before serving to let the flavors meld.

Use high-quality espresso for better flavor and ensure your mascarpone is cold for better whipping.
