Description
A warm and comforting Tomato Basil Soup made from fresh tomatoes, basil, and garlic. Perfect for any season.
Ingredients
- Fresh tomatoes
- Basil leaves
- Onion
- Garlic
- Olive oil
- Vegetable broth
- Cream or coconut milk
- Salt
- Pepper
Instructions
- Preheat the oven to 400°F (200°C).
- Cut the fresh tomatoes in half and place them on a baking sheet. Drizzle with olive oil, and season with salt and pepper.
- Roast in the oven for about 30 minutes until the tomatoes are caramelized.
- In a large pot, heat olive oil over medium heat. Add diced onion and minced garlic, cooking until soft.
- Add the roasted tomatoes and vegetable broth to the pot.
- Bring to a simmer and cook for 15 minutes.
- Blend the soup until smooth using an immersion blender or regular blender.
- Stir in the cream or coconut milk and fresh basil leaves.
- Adjust seasoning with salt and pepper.
- Serve warm and enjoy!
Notes
For a vegan option, use coconut milk instead of cream. Store leftovers in an airtight container for up to 3 days.
