Description

A warm and comforting Tomato Basil Soup made from fresh tomatoes, basil, and garlic. Perfect for any season.


Ingredients

  • Fresh tomatoes
  • Basil leaves
  • Onion
  • Garlic
  • Olive oil
  • Vegetable broth
  • Cream or coconut milk
  • Salt
  • Pepper


Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Cut the fresh tomatoes in half and place them on a baking sheet. Drizzle with olive oil, and season with salt and pepper.
  3. Roast in the oven for about 30 minutes until the tomatoes are caramelized.
  4. In a large pot, heat olive oil over medium heat. Add diced onion and minced garlic, cooking until soft.
  5. Add the roasted tomatoes and vegetable broth to the pot.
  6. Bring to a simmer and cook for 15 minutes.
  7. Blend the soup until smooth using an immersion blender or regular blender.
  8. Stir in the cream or coconut milk and fresh basil leaves.
  9. Adjust seasoning with salt and pepper.
  10. Serve warm and enjoy!

Notes

For a vegan option, use coconut milk instead of cream. Store leftovers in an airtight container for up to 3 days.
