- 2 cups mixed vegetables (e.g., bell peppers, broccoli, snap peas)
- 2 tablespoons olive oil
- 1/4 cup soy sauce
- 2 tablespoons honey
- 1 tablespoon rice vinegar
- 1 teaspoon grated ginger
- 1 clove garlic, minced
- Zest of 1 orange
- Salt and pepper to taste
- Cooked rice or noodles for serving
Instructions
- Whisk together soy sauce, honey, rice vinegar, ginger, garlic, and orange zest to make the teriyaki sauce.
- Heat olive oil in a large skillet or wok over medium-high heat.
- Add the ground turkey and cook until browned, breaking it apart with a spatula.
- Add the mixed vegetables and stir-fry for another 5 minutes until the veggies are tender-crisp.
- Pour the teriyaki sauce over the turkey and vegetables, stirring to coat.
- Season with salt and pepper to taste.
- Serve over cooked rice or noodles.
