  • 2 cups kale, chopped
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • Grated Parmesan cheese for serving (optional)

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add the chopped onion and sauté until translucent.
  3. Stir in the minced garlic, diced carrots, and celery; cook for about 5 minutes.
  4. Add the diced tomatoes, vegetable broth, cannellini beans, kale, oregano, and basil.
  5. Bring the soup to a boil, then reduce heat and let it simmer for 20-25 minutes.
  6. Season with salt and pepper to taste.
  7. Serve hot, topped with grated Parmesan cheese if desired.
