- 2 tablespoons olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 carrots, diced
- 2 celery stalks, diced
- 1 can (14 oz) diced tomatoes
- 4 cups vegetable broth
- 1 can (15 oz) cannellini beans, drained and rinsed
- 2 cups kale, chopped
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- Salt and pepper to taste
- Grated Parmesan cheese for serving (optional)
Instructions
- Heat olive oil in a large pot over medium heat.
- Add the chopped onion and sauté until translucent.
- Stir in the minced garlic, diced carrots, and celery; cook for about 5 minutes.
- Add the diced tomatoes, vegetable broth, cannellini beans, kale, oregano, and basil.
- Bring the soup to a boil, then reduce heat and let it simmer for 20-25 minutes.
- Season with salt and pepper to taste.
- Serve hot, topped with grated Parmesan cheese if desired.
Notes
- Feel free to add other vegetables like zucchini or bell peppers.
- This soup can be made ahead of time and stored in the refrigerator for up to 3 days.
- For a heartier version, add cooked pasta or rice.
