Instructions
- Heat the olive oil in a large pot over medium heat.
- Add the diced onion, carrots, and celery.
- Sauté until the vegetables are soft, about 5-7 minutes.
- Stir in the minced garlic and cook for another minute until fragrant.
- Add the vegetable broth and mixed vegetables to the pot.
- Bring to a boil, then reduce the heat and let it simmer for about 15 minutes until the vegetables are tender.
- Stir in the heavy cream or coconut milk.
- Season with salt and pepper to taste.
- Cook for an additional 5 minutes on low heat.
