Description

Ingredients

  • 2 tablespoons olive oil
  • Fresh basil (optional)
  • 1 baguette or ciabatta, sliced
  • 1 cup cherry tomatoes
  • 1 tablespoon balsamic vinegar (optional)


Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Spread cherry tomatoes on a baking sheet, drizzle with olive oil, salt, and pepper. Roast for about 15-20 minutes until soft and slightly caramelized.
  3. Combine the ricotta cheese with a drizzle of olive oil, salt, and pepper in a bowl. Whip until creamy and smooth.
  4. Toast the slices of bread until golden brown.
  5. Spread the whipped ricotta on each slice of toasted bread.
