- 2 cups grated zucchini
- 1 ½ cups all-purpose flour
- 1 cup granulated sugar
- ½ cup brown sugar
- ½ cup vegetable oil
- 2 large eggs
- 1 tsp vanilla extract

- 1 tsp ground cinnamon
- ½ tsp ground nutmeg
- ½ tsp salt

Instructions
- Preheat your oven to 350°F (175°C).
- Grease a 9×13-inch baking pan and line it with parchment paper for easy removal.
- Grate the zucchini using a box grater, then set it aside to allow the moisture to drain slightly.
- In a large bowl, combine both granulated sugar and brown sugar.
- Add the vegetable oil and mix until smooth.
- Beat in the eggs one at a time, letting them blend completely.
- Stir in the vanilla extract.
- In another bowl, whisk together the flour, baking soda, baking powder, cinnamon, nutmeg, and salt.
- Gradually add the dry ingredients to the wet mixture until just combined.
- Fold in the grated zucchini and chocolate chips (if using).
- Pour the batter into the prepared baking pan.
- Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
- Allow the bars to cool in the pan for about 10 minutes, then transfer to a wire rack to cool completely before slicing.
Notes
For extra flavor, consider adding chopped nuts or dried fruits to the batter. Avoid skipping the zucchini drainage to prevent the bars from becoming too moist.
