Ingredients
- Individual tartlet shells (shortcrust or puff pastry)
- Eggs
- Heavy cream
- Fresh mozzarella (bocconcini or ball)
- Cherry tomatoes
- Fresh basil
- Salt
- Freshly ground black pepper
- Grated nutmeg
- Grated Parmesan cheese (optional)
Instructions
- Preheat your oven to 350°F (180°C).
- Line mini tartlet or muffin tins with the pastry shells.
- Pierce the bottom of each shell with a fork.
- Drain the fresh mozzarella and cut into small cubes.
- Cut the cherry tomatoes in half or quarters.
- Chop the fresh basil leaves and reserve some for garnishing.
- Beat the eggs in a large bowl.
- Add heavy cream, salt, freshly ground black pepper, and a pinch of nutmeg.
- Whisk until the mixture is smooth and slightly airy.
- Incorporate the Parmesan cheese if using.
- Divide the mozzarella cubes, tomato pieces, and chopped basil among the pastry shells.
- Pour the quiche mixture carefully into each shell, filling about three-quarters full.
- Bake the mini quiches in the preheated oven for 20-25 minutes until the pastry is golden, and the filling is set and slightly puffed.
- Remove the mini quiches from the oven and let cool for a few minutes in the tins.
- Transfer to a wire rack. Garnish with reserved fresh basil. Serve warm or at room temperature.

Use the freshest ingredients for the best flavor. Don’t overfill the tartlets to prevent spillage.
