Description

Delightful mini quiches that combine the freshness of tomatoes, creamy mozzarella, and aromatic basil, transforming the classic Caprese salad into a warm and comforting dish.


Ingredients

  • Individual tartlet shells (shortcrust or puff pastry)
  • Eggs
  • Heavy cream
  • Fresh mozzarella (bocconcini or ball)
  • Cherry tomatoes
  • Fresh basil
  • Salt
  • Freshly ground black pepper
  • Grated nutmeg
  • Grated Parmesan cheese (optional)


Instructions

  1. Preheat your oven to 350°F (180°C).
  2. Line mini tartlet or muffin tins with the pastry shells.
  3. Pierce the bottom of each shell with a fork.
  4. Drain the fresh mozzarella and cut into small cubes.
  5. Cut the cherry tomatoes in half or quarters.
  6. Chop the fresh basil leaves and reserve some for garnishing.
  7. Beat the eggs in a large bowl.
  8. Add heavy cream, salt, freshly ground black pepper, and a pinch of nutmeg.
  9. Whisk until the mixture is smooth and slightly airy.
  10. Incorporate the Parmesan cheese if using.
  11. Divide the mozzarella cubes, tomato pieces, and chopped basil among the pastry shells.
  12. Pour the quiche mixture carefully into each shell, filling about three-quarters full.
  13. Bake the mini quiches in the preheated oven for 20-25 minutes until the pastry is golden, and the filling is set and slightly puffed.
  14. Remove the mini quiches from the oven and let cool for a few minutes in the tins.
  15. Transfer to a wire rack. Garnish with reserved fresh basil. Serve warm or at room temperature.

Notes

Use the freshest ingredients for the best flavor. Don’t overfill the tartlets to prevent spillage.
