Ingredients

  • 2 lb chicken thighs, cut into 1-inch chunks
  • 3/4 cup teriyaki sauce
  • 1 1/4 cup pineapple
  • 1/2 tsp garlic powder
  • 1 lb broccoli, cut into small florets
  • 2 tbsp olive oil


Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Combine the teriyaki sauce, pineapple, and garlic powder in a large bowl.
  3. Add the chicken chunks to the bowl and toss to coat evenly.
  4. Spread the broccoli florets on a baking sheet and drizzle with olive oil.
  5. Season the broccoli with a pinch of salt and pepper to taste.
  6. Place the marinated chicken mixture on top of the broccoli on the baking sheet.
  7. Bake in the preheated oven for 25-30 minutes or until the chicken is fully cooked.
  8. Stir halfway through cooking to ensure even roasting and caramelization.
  9. Remove from the oven and let it rest for a few minutes before serving.
