- 2 lb chicken thighs, cut into 1-inch chunks
- 3/4 cup teriyaki sauce
- 1 1/4 cup pineapple
- 1/2 tsp garlic powder
- 1 lb broccoli, cut into small florets
- 2 tbsp olive oil
Instructions
- Preheat the oven to 400°F (200°C).
- Combine the teriyaki sauce, pineapple, and garlic powder in a large bowl.
- Add the chicken chunks to the bowl and toss to coat evenly.
- Spread the broccoli florets on a baking sheet and drizzle with olive oil.
- Season the broccoli with a pinch of salt and pepper to taste.
- Place the marinated chicken mixture on top of the broccoli on the baking sheet.
- Bake in the preheated oven for 25-30 minutes or until the chicken is fully cooked.
- Stir halfway through cooking to ensure even roasting and caramelization.
- Remove from the oven and let it rest for a few minutes before serving.
Notes
For added flavor, marinate the chicken for 30 minutes or longer. Adjust seasonings to taste before serving.
