Description

Deliciously moist muffins filled with fresh strawberries and a creamy cheese center, perfect for breakfast or a sweet treat.


Ingredients

  • 1 ½ cups all-purpose flour
  • 1 cup granulated sugar
  • ½ cup unsalted butter, softened
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • ½ cup cream cheese, softened
  • 1 cup fresh strawberries, chopped
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt


Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, cream together the softened butter and sugar until light and fluffy.
  3. Add the eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
  4. In a separate bowl, whisk together the flour, baking powder, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  6. Fold in the chopped strawberries gently.
  7. In another bowl, mix the softened cream cheese until smooth.
  8. Fill each muffin cup halfway with the batter, add a spoonful of cream cheese mixture, then top with more batter until the cups are about ¾ full.
  9. Bake for 20-25 minutes or until a toothpick inserted into the center comes out clean.
  10. Let the muffins cool in the pan for 5 minutes before transferring to a wire rack to cool completely.
